Why can the ejection time in the results table in Analytics (Sciex OS Software) differ to the ejection time displayed in the auto exported .txt files?

This behavior is by design:

The time stamp is the ejection time specified as UTC, formatted using ISO 8601, not impacted by the Regional Settings on the workstation. This ISO standard eliminates confusion caused by different day–date formats, and time zones in global operations. It provides a clear and standardized method for presenting dates and times that is easily understood by both humans and machines.
